Cucumber Feta Salsa

This is my version of a Cooking Light recipe.  As per usual, I have added things to make it less light, but this version of the sala is still pretty low calorie.


Servings: 6-9

Ingredients:

  • 1 cup crumbled feta

  • 2 tablespoon fresh lemon juice

  • ¼ teaspoon. pepper

  • 1 ½ cup cucumber, peeled, seeded and diced (*)

  • 1 C. finely diced red onion

  • 3 T. chopped fresh mint

  • 3 T. chopped fresh dill

Chef’s Tips:

(*) I usually use hothouse cucumber – less seeds and usually more flavor

Instructions:

  1. Combine feta, lemon juice and pepper in a bowl.  Using a fork, partially mash the feta and juice together.

  2. Add the cucumber, onion, mint and dill and stir together. 

  3. Serve with pita chips
