Cucumber Feta Salsa
This is my version of a Cooking Light recipe. As per usual, I have added things to make it less light, but this version of the sala is still pretty low calorie.
Servings: 6-9
Ingredients:
1 cup crumbled feta
2 tablespoon fresh lemon juice
¼ teaspoon. pepper
1 ½ cup cucumber, peeled, seeded and diced (*)
1 C. finely diced red onion
3 T. chopped fresh mint
3 T. chopped fresh dill
Chef’s Tips:
(*) I usually use hothouse cucumber – less seeds and usually more flavor
Instructions:
Combine feta, lemon juice and pepper in a bowl. Using a fork, partially mash the feta and juice together.
Add the cucumber, onion, mint and dill and stir together.
Serve with pita chips
