Megan’s Graduation Salad

I have changed this recipe up since I first gave it out. I think the lighter lemon juice or champagne vinegar rather than the original white wine vinegar allows the milder lettuce and hearts of palm flavor to be the stars they should be in this salad.


Servings: 4-6

Ingredients:

  • Butter Lettuce

  • Apples or firm pears

  • Candied pecans

  • Hearts of palm

Dressing:

  • ⅓ cup lemon or champagne vinegar

  • 1 clove garlic - minced

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 2 tablespoons sugar or honey

  • ⅔ cup really good olive oil

Instructions:

  1. Combine vinegar, garlic, salt, pepper and honey. Whisk

  2. Slowly drizzle olive into mixture while continuing to whisk. Pour over salad.
