Marianne’s Tortilla Soup

I recommend getting pre-cooked chicken for this soup, because if you do, there is virtually no prep involved, just can opening.


Servings: 8-10

Ingredients:

  • 28-ounce can crushed tomatoes

  • 2 8-ounce cans tomato sauce

  • 2 cloves garlic

  • 4 cups chicken broth

  • 2 tablespoons sugar

  • 3 teaspoons chili powder

  • 1 teaspoon salt

  • 1 ½ teaspoons oregano

  • 4-ounce can diced chilies

  • 2 cups cooked chicken

Instructions:

Combine all ingredients in a large stock pot. Bring to a boil, then reduce heat and simmer for about 1/2 hour. Alternately, use a crock pot and allow to simmer several hours, or all day. Serve with garnishes.

Garnishes:

  • Tortilla chips - crushed

  • Avocado - diced

  • Sour cream

  • Grated cheese
