Grilled Brie and Bread

I think this is my version of a recipe I found in the NY Times cooking section.  It is a great app for an outside party around the BBQ to eat while the main course is grilling.


Servings: 6-8

Ingredients:

  • 1 8 ounce brie round

  • 1 loaf crusty bread, sliced

  • Olive oil for brushing on bread

  • 1 clove garlic

  • Honey for drizzling

Instructions:

1. Place blackberries in a bowl and using a potato masher, smash the blackberries until they are still chunky but not in too large.  Stir in the basil, jalapeno, lime juice and salt.  Store in refrigerator until ready to use.

2.  Preheat grill to high.

3.  Brush both sides of bread with olive oil.  Place on grill and grill until bread is golden and toasty, about 2-3 minutes.  Watch out – it is easy to burn.  Turn over and repeat.  Remove from grill and rub with a clove of garlic that is sliced in half on side of each slice of bread. 

 4.  Place whole brie on grill, close the lid and cook for about 5-7 minutes on each side, until lightly charred and softened.  Remove from grill.  Be careful when flipping the brie to avoid breaking it open.

5.  To serve, place the brie on a cutting board or platter, drizzle it with honey and pour a portion of the salsa over the top.  Serve with grilled bread and remaining salsa.
