Strawberry Thyme Lemonade

I found this recipe in a Williams-Sonoma catalogue some years ago. I think. Iā€™m not sure, but it is great and whichever catalogue published it, thanks!

Servings: 4-6

Ingredients:

  • 1 c. sugar

  • 8 sprigs thyme

  • 6 c. water, divided

  • 2 1/2 c. strawberries

  • 1 1/2 c. fresh lemon juice

Instructions:

  1. In a small saucepan over medium heat, combine sugar, thyme and 1 cup water. This creates a simple syrup. Bring to boil, stirring occasionally, until the sugar has dissolved and the liquid is clear.

  2. Remove from heat and let cool.

  3. Hull (remove the green portion) the strawberries and place in a large 10-12 c. pitcher.

  4. Add the cooled simple syrup, lemon juice and remaining 5 cups of water to the pitcher. Stir to combine.

  5. Let steep for 1-2 hours at least, and serve over ice.
