Oatmeal Heath Bar Cookies

These are just a little too addictive and you end up eating way more than you intended almost before you notice.


Servings: Approximately 3 dozen

Ingredients:

  • ¾ cup flour

  • 1 cup oats

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ¾ cup packed brown sugar

  • ¼ cup butter, at room temperature

  • 1 teaspoon vanilla extract

  • 1 large egg

  • ½ cup crushed Heath Bar or toffee bits

Instructions:

  1. Preheat oven to 350 degrees. Spray baking sheets with non-stick spray or line with Silpat.

  2. Combine flour, oats, soda and salt in medium bowl, stir with whisk until combined.

  3. Cream sugar and butter in mixer with paddle attachment until well-blended, about 3 minutes.

  4. Add vanilla and egg, beat well.

  5. Add flour mixture, beat just until combied. Remove from mixer and stir in Heath Bar.

  6. Drop by tablespoonfuls 2 inches apart on baking sheet. Bake for 8 to 10 minutes. Cool for 1 minute on pans, them move to wire rack to cool completely.
