Mom’s Barbeque Beef Sandwiches

Traditional summer dish for all large gatherings. Make it easier by using good quality deli sliced meat and cooking for less time in the sauce on the stove top. Not quite as good, but faster.


Servings: 8-10

Ingredients:

  • 3 to 5 pounds roast beef, thinly sliced (*)

  • 2 tablespoons brown sugar

  • ¼ teaspoon ground clove

  • 2 teaspoons salt

  • ⅛ teaspoon pepper

  • 2 tablespoons flour

  • 1 ½ cups ketchup

  • ¾ cup water

  • ½ cup vinegar

  • 1 tablespoon prepared mustard

  • ¼ cup minced onions

  • 2 tablespoons Worcestershire Sauce

(*) Can be eye of round, rump, etc. To save time, if you have a good deli, you can buy the beef from them already cooked and sliced. Much easier.

Instructions:

  1. Cook roast until done. Slice thin.

  2. Combine dry ingredients together in saucepan.

  3. Add remaining ingredients, stir to combine, turn on heat and bring to boil.

  4. Simmer until thickened, about ½ hour.

  5. Place beef in slow cooker. Pour sauce over beef and cook for minimum of 5 hours.

  6. Serve on dense buns - the best are the English Muffins from Granite Bakery in Salt Lake. If you don’t live in Salt Lake, then I recommend Orowheat’s potato hamburger buns. Not as good as Granite’s, but they will do.
