Guacamole
After going to Cabo San Lucas and watching guacamole made table side at every restaurant, and loving it, I just did what they did, with the exception of the tomatoes, which I added just because why not?
Servings: Depends on how deep you dip. Probably enough for 6
Ingredients:
3 ripe avocados
Juice of 1 lime/lemon
½ red onion, diced
1 small tomato, diced
Tabasco sauce to taste
Salt and pepper to taste
Cilantro if you must (but not if you want me to eat it)
Instructions:
In a large bowl, peel and mash avacodos until mostly smooth, but with a few lumps still.
Add lime/lemon juice and stir.
Add onion and tomato, then Tabasco and salt and pepper, tasting after each addition to ensure proper seasoning.
Then, if you must, add the cilantro.
