Guacamole

After going to Cabo San Lucas and watching guacamole made table side at every restaurant, and loving it, I just did what they did, with the exception of the tomatoes, which I added just because why not?


Servings: Depends on how deep you dip. Probably enough for 6

Ingredients:

  • 3 ripe avocados

  • Juice of 1 lime/lemon

  • ½ red onion, diced

  • 1 small tomato, diced

  • Tabasco sauce to taste

  • Salt and pepper to taste

  • Cilantro if you must (but not if you want me to eat it)

Instructions:

  1. In a large bowl, peel and mash avacodos until mostly smooth, but with a few lumps still.

  2. Add lime/lemon juice and stir.

  3. Add onion and tomato, then Tabasco and salt and pepper, tasting after each addition to ensure proper seasoning.

  4. Then, if you must, add the cilantro.
