Grilled Salmon with Avocado and Orange Salsa

This recipe is from Cooking Light. I may have adjusted it a bit and added some of the calories back in, but not too many.


Servings: 6

Ingredients:

  • ¼ cup maple syrup

  • 2 tablespoons Grand Marnier or other orange flavored liqueur

  • 1 teaspoon orange zest

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • 6 salmon fillets

  • 1 cup orange sections (about 2 oranges) diced

  • ¾ cup diced peeled avocado (about 1 avocado)

  • ¼ cup fresh orange juice (about 1 orange)

  • 2 tablespoons finely chopped red onion

  • 1 tablespoon finely chopped fresh chives

  • 1 tablespoon fresh lime juice

Instructions:

  1. Preheat grill, or broiler. Spray fish grill pan with non-stick spray.

  2. Combine syrup, liqueur and zest in a small saucepan. Bring to boil. Cook until reduced to ¼ cup. Cool 5 minutes.

  3. Sprinkle salt and pepper over salmon. Brush with syrup mixture.

  4. Place salmon on grill pan and cook for about 11 minutes or until done.

  5. Combine orange sections, avocados, orange juice, onion, chives and lime juice in a medium bowl. Serve with fish.
