Chicken and Goat Cheese
An easy way to elevate chicken.
Servings: 4
Ingredients:
4 boneless chicken breast, skin on or off
8-10 ounces herbed goat cheese
1 bunch fresh basil
Olive oil
Salt and pepper to taste
Poultry Seasoning
Instructions:
Preheat oven to 350 degrees.
Rinse and pat chicken dry. If using skin-on chicken, gently lift skin off of breast, leaving it still attached on the sides. If using skinless breasts, slice horizontally into the chicken to create a pocket.
Slice goat cheese and stuff into the pocket you have created. Then place basil leaves on top of cheese and press down on edges to close pockets.
Place chicken in baking dish, drizzle with olive oil and sprinkle with salt pepper and Poultry Seasoning.
Bake for 45 mins to an hour. Serve.
