Chicken and Dumplings

This is a lovely comfort meal.


Servings: 6-8

Ingredients:1 lb chicken breast

  • 1 T. olive oil

  • 1 onion, chopped

  • 2 carrots sliced

  • 2 stalks celery, sliced

  • 8-10 cups liquid – white wine, stock, water

  • 1 lb. cooked chicken

  • Frozen peas, corn or any other veggie you want to add

  • 2 c. flour

  • 1 t. salt

  • 4 t baking powder

  • 4 T parsley

  • 2 beaten egg

  • ½ c milk

  • 2 T cooking oil

  • ¼ c cornstarch

Instructions:

1.  Cut up chicken breasts into bite-sized pieces

2.  Bring liquids to boil in large stock pot with tight-fitting lid.  Add chicken and boil until nearly cooked through.

3.  While chicken is cooking, combine flour, baking powder, salt and parsley in bowl.

4.  In another bowl combine egg, milk and oil and whisk.

5.  Add egg mixture to flour mixture and stir with fork only until combined.

6.  Drop dough from a tablespoon directly on bubbling broth

7.  Cover with lid, reduce heat and cook for 10-15 minutes, DO NOT LIFT LID.

8.  Remove chicken and vegetables to a bowl.

9.  Combine cornstarch with ¼ c cold water and stir to dissolve.  Pour into bubbling broth and stir to thicken.  Pour sauce over chicken and serve.
