Bridget’s Banana Bread

I got this recipe from my friend and trainer Lori. She got it from her sister. That’s as far back as I can trace it. This recipet elevates your basic banana bread to something a little special.


Servings: One Loaf

Ingredients:

  • 1 cup (approximately 2 to 3) ripe bananas, mashed

  • ½ cup sour cream

  • ¼ cup vegetable oil

  • 2 eggs

  • 1 ½ cups flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup sugar

Instructions:

  1. Preheat oven to 325 degrees.

  2. Grease and flour a loaf pan

  3. Mix bananas, sour cream, vegetable oil, and eggs in a mixing bowl at medium speed.

  4. In another bowl, stir flour, powder, soda, salt and sugar until fully mixed. Add to wet ingredients and mix at low speed until incorporated.

  5. Pour into prepared loaf pan. Bake for 1 hour and 15 minutes, or until toothpick inserted in middle comes out clean. Allow to cool for 10 minutes, then remove from pan and cool on rack.
